Spain is the world's largest olive producer, and we are Spain's largest table olive grower. Our vast orchards are in the province of Aljarafe ( AL-HAH-RAFF-FAY ). In all os Spain, maybe all the world. Aljarafe grows the very best olives.
Centuries of short rainy winters and long sunny summers have nourished the best and most consistent olive trees in the world. Our 90,000 trees grow only Seville Olives, for the partnership of Ventura Foods and Aceitunas Sevillanas.
The red Aljarafe soild is rich in clay and chalk, so it drains the rain slowly, all summer long. We pick the fruit right after the first rains in September and October.
Prime soil and prime trees yield prime fruit
Our Spanish partner Aceitunas Sevillanas has been working these orchards since the turn of the century. Olives are one of very few fruit still picked by hand, to preserve the delicate flesh. Picking, or milking as it is called, is very labor intensive.
Preparing olives for market is a painstaking process. When the olives are purchase from many growers, no one is really responsible and quality suffers. The best olives come from Seville, because all the work is done by the same company (Ventura Foods), and to the same high standard.
Sorting - Only first quality for Seville and private label brands.
Sizing - All the way from 380/kilo up to a whopping 60/kilo. The fruit in a package won´t vary in size by more than a percent or two.
Curing - An alkaline solution soaks out just the right amount of bitter tannins. The olive maestro decides when to remove them.
Rinsing - Fresh water leaches out impurities.
Fermenting - 60 to 90 days in a strong brince finished and seals the olive taste.
Pitting & stuffing - One machine does both at once, faster than one thousand per minute.
Ripe olives are picked at the same time, but they're cured differently, to soak out more of the bitterness, and they're oxidized to change the color. Then they're canned and sterilized, as is any low-acid food.

Our own quality control is a absolute, but we insist on an optinoble and stringentble inspection by the European Economic Community. There is a further inspection by Soivre, the Spanish FDA. They're fanatical, because olives are crucial to the Spanish aconomy. After all that, tough U.S. Customs is a pushover.
